Every time we bring this dish to a gathering, we receive countless requests for the recipe. Everyone loves how flavorful it is, and we love how easy it is to make!

Let’s Talk About The Corn

For a genuinely fresh salad, we recommend buying and husking ears of corn.

However, we have also used two 10 oz bags of frozen corn as a substitute when fresh is hard to find or we want to save time. Frozen works great, and we don’t notice a strong difference!

We don’t recommend using canned corn for this recipe.

Chop, Chop!

This corn salad recipe calls for fresh vegetables to be mixed in, which adds a nutritious and refreshing element. Fresh basil is a must and gives the salad a wonderful flavor. Fresh basil, grape tomatoes, and green onions should be chopped and tossed with corn.

We love feta, and it goes so perfectly with this dish! Make sure to gently toss the feta to distribute it evenly, and sprinkle a little extra on top for an impressively gorgeous salad!

Fresh Corn Salad

Our fresh corn salad is a colorful and refreshing side dish for any picnic! It's the perfect summer recipe, but we love it anytime.

Ingredients
  

  • 4 ears corn fresh, husked
  • 2 cups grape tomatoes
  • 1/3 cup green onion chopped
  • 1/4 cup basil fresh, chopped
  • 1/4 tsp garlic minced
  • 1 1/2 tbsp olive oil
  • vinegar to taste
  • salt to taste
  • pepper to taste
  • 1 cup feta

Instructions
 

  • Cook the corn. Bring a large pot of salted water to a boil and add corn, cooking for about 6-8 minutes. While corn is cooking, fill a large bowl with ice water. Use tongs to remove corn from the pot and immediately plunge it in ice water until cooled.

  • Remove kernels from cobs and place in a mixing bowl.
  • Add tomatoes, green onions, and basil and toss to combine.
    2 cups grape tomatoes, 1/3 cup green onion, 1/4 cup basil
  • Mix in the olive oil, garlic, vinegar, salt, and pepper and toss to coat.
    1/4 tsp garlic, 1 1/2 tbsp olive oil, vinegar, salt, pepper
  • Add the feta and gently toss salad.Sprinkle more feta on top for a beautiful salad!
    1 cup feta
  • Cover and refrigerate for at least one hour before serving.
