Ready For A Recipe Hack For Your Next Party?
Summer is the time for backyard gatherings and festive birthday and holiday parties. If you’re like me and my mama, you’re constantly trying to figure out a new, fun dish to make and bring to each of them.
It gets tiring worrying if someone else is bringing the same brownies to the party, am I right? And let’s not even start with the judgy guests who are quick to give your dish the “that’s what they brought?” side-eye.
Don’t worry. My Mama’s NC Kitchen’s got you!
Leave the heavy mixer behind and surprise everyone by turning up the flavor with a pastry treat made with baked brie, apricots, and spiked Cheerwine cherries.
Let’s be honest: baked brie makes everything fancier, and adding some of North Carolina’s very own Cheerwine brings it back to a sassy southern mouthful.
Apricot, Brie & Cherry Cheerwine Puff Pastry Bites
Equipment
Ingredients
- 1/2 cup cherries fresh
- 1/2 cup apricot jam
- 1 tbsp Cheerwine Syrup
- 1 package puff pastry buy frozen and thaw for use
- 16 oz Brie wheels or wedges
Instructions
- Preheat your oven to 375 °F.
- Wash and hull your cherries.1/2 cup cherries
- Mix the fresh fruit and jam. You may need to mix your jam first to break it down if it's been refrigerated.1/2 cup apricot jam, 1/2 cup cherries
- Then add your cherries and Cheerwine syrup, and mix with a spoon or spatula to blend.1 tbsp Cheerwine Syrup
- Cut your puff pastry. It's easiest to slice each sheet of thawed pastry into four rows of four squares. Then drop one square into a prepared muffin pan. Use baking spray or melted butter to grease each cup.1 package puff pastry
- Divide your brie. Cut each wheel of brie into cubes. You can remove the rind of the wheel if it's not to your liking, but you might want to freeze the cheese before removing it so it will slice without smearing.16 oz Brie
- Drop a cube of brie onto each square and top with a teaspoonful of your fruit and jam mixture. You can get creative and add shaved almonds or crushed walnuts, too, if you like pastry with a crunch!
- Drop the muffin trays into your preheated oven for 15-20 minutes, or until the corners of your puff pastry begin to turn golden brown.
- Remove your muffin pans from the oven and let them sit to cool.
- Once they've rested, remove and serve!
